Making Bread
Making bread is one of my passions; of course my wife is the main one, but with her stranded in Peru, I have lots of time to make a mess in the kitchen while trying my hand at making bread.
Bread-making did not begin for me during the onset of the COVID-19 crisis; it began a long time ago helping my mom make some of the best bread, buns, cinnamon buns and other flour-based delights that anyone could ever imagine. Every two weeks it was bring out the large double boiler to begin the all-day process to make 15 loaves of bread, along with buns and some of the sweeter delights. What a memory, standing on a chair to reach over the edge of that huge pot to mix and knead the dough. I can still see it in my mind and I am sorry that I do not have any pictures of that quality family time.
But, on to today. I have been experimenting with slightly different mixes to make the penultimate of sourdough bread and I think I am pretty close to finding it. I must be hitting something right as I am now tapped out making bread for my friends and family.
It all started with a small amount of sourdough starter that I ordered from King Arthur Flour. From there, I have been tweaking, all with the intent of finding the best mix and technique. As I write this, I have a batch of dough going through the first proof to rise and I will show the results later.
There is nothing like fresh home-made bread and forget about all that hard work we went through with my mom; yes it takes time, but most of the time is waiting for the dough to rise. The first step of mixing the dough took all of 10 minutes. Why not give it a try? It is a great way to give the kids something different to do and add a sense of pride for the family too.
