Cook an Apple Pie in a Paper Bag

Every day at Discount Motor City, the best of the used car dealerships, Surrey, we are always looking for ways to make our customer’s lives better. And since it is Thanksgiving tomorrow, we want to share this idea for making the perfect apple pie for desert.

What has this got to do with used cars? Well nothing, except I love to cook which is a hand-me-down from mother, where my earliest memories of being in the kitchen start at about four years old. But, I digress. The apple pie recipe is the “quick version” as most of us do not have the time to make the pie crust.

Ingredients for the pie

  • Buy a 9-inch prepared pie crust in your favorite store freezer aisle. They usually come in packages of two crusts; don't worry as you will probably want to make two as one is never enough.

  • 3.5 pounds apples, peeled, cored, and sliced; enough to make 8 cups sliced apples. Granny Smith apples will give you a tart taste, or Gala are for the sweeter tooth.

  • 3/4 cup (159g) brown sugar

  • 1 teaspoon of ground cinnamon

  • ¼ teaspoon of salt

  • ½ teaspoon of ground nutmeg

  • 2 tablespoons of lemon juice – I prefer to squeeze the lemons rather than using the packaged juice in those little fake plastic lemons.

  • 3 tablespoons of Unbleached All-Purpose Flour – or, use regular flour.

Make the Filling

  • Put the sliced apples in a big microwave-safe bowl, and stir in the brown sugar, cinnamon, salt, nutmeg, lemon juice – do not add the flour.

  • Microwave the filling, uncovered, for 5 minutes. This softens the apples just a bit, and gets their juices flowing. Skip this step if you like the apples a little crispier.

  • Stir in the flour

Make the Streusel Topping:

  • ½ cup granulated sugar

  • ½ cup All-Purpose Flour or regular flour

  • ½ cup cold butter, cut into small squares

  • Combine the sugar, flour, and butter, working them together until crumbly. Don't over-mix; you don't want the Streusel to turn into a solid mass.

Putting it all Together

  • Spoon the filling into the crust.

  • Spread the Streusel atop the filling.

  • Place the pie in a brown paper grocery bag. If you're nervous about baking in a paper bag, make a bag out of parchment paper.

  • If you use parchment paper, staple the sides together to form a bag large enough to fit the pie.

  • Slide the pie in the bag and staple the bag shut. Place on a cookie sheet and slide into the preheated oven.

  • Bake the pie for one hour.

  • Remove from the oven and carefully open the bag, avoiding any steam. Remove the pie and set it on a rack to cool for at least 30 minutes before slicing – in all of this, the waiting to eat the pie is probably the hardest part.
