Caramel Corn For Halloween


Growing up, I always marvelled at the dishes our mom could turn out. Every two weeks there were fifteen loaves of bread, add on cinnamon buns, and the dinners were any person’s dream. And, when it came to Halloween, it was never “pop down to the store to buy candy,” it was a tradition at our home for mom to make caramel popcorn.


Each year the kids would come to get one of mom’s prized bags of caramel corn, which she made with nary a recipe. I carried on the tradition when our kids were young, and for you that may want to make a sweet and easy treat for Halloween, here is how to quickly and easily make caramel popcorn.


What You Will Need

  • Popping Corn – ½ cup of kernels will make 15 cups of popped corn

  • Molasses – 2 tablespoons

  • Brown Sugar – 1 cup

  • Salted Butter – ½ cup

  • Corn Syrup – ¼ cup

  • Baking Soda – ½ teaspoon

  • Large Pot/bowl – to hold 15 cups of popcorn

  • Cookie Sheet – for baking popcorn in the oven

  • Parchment Paper

  • Small Cooking Pot for heating caramel mixture


The Easy Directions


Step 1:

  • Pop the corn and place into the large pot or bowl

  • Pre-heat your oven to 200 degrees F (95 degrees C)

  • Line your cookie sheet with parchment paper


Step 2:

  • Put Molasses and corn syrup in your cooking pot. Now, here is a trick: lightly coat your measuring spoon with oil, which will help the molasses and corn syrup slide right off.

  • Bring mixture to a boil and stir for five minutes. Please be careful with the hot and sticky liquid.

  • After five minutes, remove from heat and sprinkle in the ½ teaspoon of baking soda. The caramel will foam up a little, thicken, and change colour.

  • Immediately, pour the caramel mixture over the popcorn in the pot and stir constantly to cover all the kernels of corn.

  • When the corn is covered in caramel, transfer the “big blob” to your cooking sheet. Spread out evenly and pop it into the oven.

  • Bake for one hour, taking it out every 15 minutes to stir it. That will make it bake evenly.
